Homemade Granola Bar

Try these homemade granola bars. These bars can be made on the weekend when there is a little more time to prepare.

Ingredients

  • 150 g unsalted mixed nuts (if you are allergic to peanuts, then you can use walnuts or almonds)

  • 225 g rolled oats (these are larger than the standard, finer porridge oats)

  • 225 g pre-pitted (stone removed) dates

  • 40 g smooth or crunch peanut butter (you can use cashew butter if you allergic to peanuts)

  • 40 g honey

Directions

  • Place the nuts and oats into a food processor and blitz them a few times to break them up, or roughly chop the mixture. Make sure not to blitz or cut them too fine as you want larger, textural pieces.
  • Place the pitted dates into the food processor after, and blitz until they form a smoothish paste.
  • Combine the nut butter and honey with the chopped oats and nuts.. Incorporate fully.
  • Place the mixture into the tray lined with greaseproof paper, and chill for around an hour until firm and set.
  • Once they have set, cut them into 16 x 45g bars. Place in a sealed container and refrigerate. Either use in a few days, or you can freeze them for up to 2 months.
