Strawberry Rhubarb Yoghurt Lollipops

A delicious, healthy alternative to shop-bought lollipops that kids (& adults!) will love. There’s even some hidden carrot thrown in.

Ingredients

  • 1 cup Strawberries

  • 1/2 cup Rhubarb, chopped

  • 1/4 cup Carrot, peeled & chopped

  • 200 g full-fat natural yoghurt (or coconut yoghurt)

Directions

  • Steam your strawberries, rhubarb & carrot for 10 minutes (if you have a child who is particularly fussy with texture, steam the carrots for an additional 5 minutes to make sure they’re soft enough to blend into a smooth paste).
  • Use a blender to puree the steamed strawberries, rhubarb & carrot.
  • Layer your puree in your moulds with the yoghurt to create a swirling effect.
  • Freeze until solid, ideally overnight.
