These bars are full of carbohydrates and fibre and naturally low in saturated fats. They’re a great snack to fuel you for exercise, or to get you through the day.

Ingredients

  • 135 g rolled oats

  • 100 g almonds, roughly chopped

  • 40 g pumpkin seeds

  • 65 g nut butter- peanut butter or almond butter 

  • 80 g honey

  • 200 g dates

Directions

  • Put the dates in a food processor with 100ml water and blitz until they form a dough-like consistency
  • To a large mixing bowl, add the oats, almonds, and dates. Mix.
  • In a small saucepan, warm the honey and nut butter until thin and combined. Then, pout it over the oat mixture and stir. 
  • Once mixed, transfer it to a lined baking dish (8x8inch or 20x20cm) and scatter over the pumpkin seeds, press down firmly until flat. Then place it in the fridge for 45 mins – 1 hour. 
  • Once ready to eat, cut into 12 even bars and enjoy.
