Simple Greek Salad
Recipe by Amie LunnThis Greek salad is the perfect summer meal, with minimal preparation and maximum taste, it offers great heart health benefits as it incorporates both extra-virgin olive oil and Kalamata olives, making it packed full with heart healthy fats.

- Dressing
1/4 cup extra-virgin olive oil
3 tbsp red wine vinegar
1/2 tsp dried oregano
1/4 tsp Dijon mustard
1/4 tsp black pepper
1 garlic clove – minced
- Salad
1 cup block feta cheese (200g)
1 x cucumber
1 x green pepper
1 cup cherry or plum tomatoes
1/2 red onion
1/3 pitted Kalamata olives
A few fresh mint leaves to garnish (optional)
Directions
- Mix all the ingredients for the dressing together and set aside.
- Chop the cucumber and pepper into small cubes, half the tomatoes and thinly slice the red onion – add them to a large serving bowl.
- Cut the feta into ½ inch cubes and add to the bowl with the Kalamata olives.
- Drizzle over the dressing and gently toss together.
- Garnish with some fresh mint leaves.
