3 reasons why it’s heart healthy

Super simple and quick to make, this healthy side is perfect to serve alongside your favourite curry.

Ingredients

  • 1 x large cauliflower

  • 1 tbsp medium curry powder

  • 1/2 tsp ground black pepper

  • 2 tbsp olive oil

Directions

  • Preheat the oven to 200°C and line a baking tray with grease proof paper or a reusable non-stick mat.
  • Chop the cauliflower florets into bite-sized pieces and put it into a large mixing bowl.
  • Add the curry powder and black pepper and toss to coat the florets.
  • Add the olive oil and mix well, making sure every floret is coated with oil and spices – it’s easier to use your hands for this step. 
  • Distribute the cauliflower on the baking tray and cook for 25 minutes turning halfway through. Serve with your favourite curry!
