2 x small potatoes or one medium
2 x wholewheat wraps
1/2 onion, finely chopped
30 g low fat cheddar cheese, grated
1/4 ground black pepper
1 x egg, beaten
Salad to serve
Directions
- Pierce the potatoes a few times with a fork and cook them covered in the microwave for about 10 minutes, turning them over halfway through.
- While the potatoes cook, chop the onion, grate the cheese and beat the egg.
- Once cooked, use a fork to mash the potatoes, leave the skin on as this contains additional fibre. You might need to use a knife to chop the skin into small pieces. Add the mashed potatoes to a bowl along with the onion, cheese and pepper. Mix everything together well.
- Take a wrap and spread half of the potato mixture over half of the wrap, leave a small gap around the edge to seal. Do the same with the other wrap.
- Brush around the edges and over the exposed side of the wrap with the beaten egg, fold the wrap over and use a fork to crimp the edges.
- Brush the top side of the wrap parcels with beaten egg and cook in the air fryer on max crisp setting (if your model has it) or 240°C for 3 minutes. Flip the pastie over and brush the other side with beaten egg before cooking for a further 3 minutes. Serve with a side salad and enjoy.
