
Corn on the Cob Ribs

- Corn
2-4 large corn on the cobs
- Spice Mix
1 tsp cracked black pepper
1 tsp onion powder
1 tsp garlic powder
1 tsp dried oregano
1 tsp smoked paprika
1/2 tsp chilli powder
1 tbsp extra virgin olive oil
Directions
- Preheat the oven to 220 degrees Celsius.
- Place a pan of boiling water over a high heat. Once the water is boiling, place the corn on the cobs in the water and cook for 10 minutes.
- Drain, and leave to cool for 10 minutes.
- Once cooled, carefully slice the corn on the cobs down the centre, lengthways, into quarters.
- In a bowl, add the spices and mix thoroughly to incorporate
- In a separate bowl, add the quartered ribs and the oil. Toss together. Once coated in oil, sprinkle over the spices and make sure to incorporate fully.
- Place on a large baking tray and place in the oven for 20-25 minutes or until golden brown. Serve.
