
Crispy Chicken with Salad
Using a small amount of unsaturated fat such as olive oil to cook the chicken in the air fryer provides a healthier alternative to deep fried chicken. Eating less saturated fat helps to lower levels of harmful (LDL) cholesterol

150 g wholemeal bread
1/2 tsp ready chopped garlic
2 x boneless and skinless chicken breasts
Olive oil
1 x lemon
2 tsp runny honey
Directions
- Place torn slices of bread into a food processor with garlic and blitz to fine breadcrumbs (*this can be prepped at home and stored in a food bag)
- Place the chicken breasts between 2 large sheets of greaseproof paper, then wash your hands.
- . Using a rolling pin whack chicken breasts to flatten them to about 1 cm thick.
- Lift chicken and pour half breadcrumbs onto the paper and put chicken back down onto the breadcrumbs and scatter the remaining breadcrumbs on the top.
- Then re-cover with the paper, wash your hands. Whack the chicken again to help the crumbs stick to the chicken.
- Place the crumbed chicken in the air fryer in a single layer and cook at 200°C for 8 minutes or until cooked through.
- Turn the chicken over halfway through cooking.
- Remove the cooked chicken, squeeze over the lemon juice and drizzle with honey then slice the chicken 1cm thick and serve with a mixed salad.
