2 Wholemeal Sandwich Thins
1 Medium Sweet Potato
1 Red Pepper
1 Yellow Pepper
Handful Spinach
50 g Mozzarella
Directions
- Peel, chop and boil the sweet potato in un-salted water until soft enough to mash or blend.
- Mash/blend the sweet potato into a smooth puree.
- Evenly spread the sweet potato paste onto the sandwich thins
- Thinly slice the red and yellow peppers.
- Thinly cut the mozzarella to fit the sandwich thin base.
- Place the cut vegetables and mozzarella and place on to the sandwich thins.
- Pop into the pre-heated oven for 8-10 mins.
- Take it out of the oven and cool for a few minutes, enjoy!
