Red pepper and tomato soup

1 tbsp rapeseed oil
2 x red peppers, roughly chopped
2 x garlic cloves, crushed
400 g tomatoes, halved
1 x red onion, roughly chopped
400 ml reduced salt vegetable stock
1 tsp red chilli flakes
Directions
- Place the red peppers, garlic cloves, tomatoes and onion in your air fryer tray and drizzle with rapeseed oil. Roast for 15 minutes on 180°C or until soft.
- Once cooked, add to a blender, making sure the skin is off the garlic. Add the chilli flakes (more if you can handle the heat) and some of the vegetable stock. Blend.
- Add more vegetable stock until you reach your required consistency.
- Add the mixture to a pan and heat.
- Serve and enjoy.
