Ingredients

  • 1 tbsp rapeseed oil 

  • 2 x red peppers, roughly chopped

  • 2 x garlic cloves, crushed 

  • 400 g tomatoes, halved 

  • 1 x red onion, roughly chopped

  • 400 ml reduced salt vegetable stock 

  • 1 tsp red chilli flakes

Directions

  • Place the red peppers, garlic cloves, tomatoes and onion in your air fryer tray and drizzle with rapeseed oil. Roast for 15 minutes on 180°C or until soft. 
  • Once cooked, add to a blender, making sure the skin is off the garlic. Add the chilli flakes (more if you can handle the heat) and some of the vegetable stock. Blend. 
  • Add more vegetable stock until you reach your required consistency.  
  • Add the mixture to a pan and heat.  
  • Serve and enjoy.
