Ingredients

  • 1/2 red pepper 

  • 1/2 courgette 

  • 1/2 aubergine 

  • 1/2 red onion 

  • 1 tbsp olive oil 

  • 1/4 tsp black pepper 

  • 1/4 tsp garlic granules or 1 fresh clove minced 

  • 100 g low-fat hummus 

  • Handful of rocket 

  • 4 x slices of wholewheat sourdough bread

Directions

  • Slice the pepper, courgette, aubergine and onion and place in a baking dish. Add the olive oil, black pepper and garlic and mix everything up. Roast in the oven for about 20 minutes until beginning to brown. 
  • Step 2: Spread the hummus between the slices of bread, add the roasted veggies and top with rocket. Serve and enjoy!
