Roasted Veg & Hummus Sandwich

1/2 red pepper
1/2 courgette
1/2 aubergine
1/2 red onion
1 tbsp olive oil
1/4 tsp black pepper
1/4 tsp garlic granules or 1 fresh clove minced
100 g low-fat hummus
Handful of rocket
4 x slices of wholewheat sourdough bread
Directions
- Slice the pepper, courgette, aubergine and onion and place in a baking dish. Add the olive oil, black pepper and garlic and mix everything up. Roast in the oven for about 20 minutes until beginning to brown.
- Step 2: Spread the hummus between the slices of bread, add the roasted veggies and top with rocket. Serve and enjoy!
