Turkey Meatballs with Roasted Vegetables

Leaving the skins on the vegetables increases their fibre content, great news for heart health! Turkey mince is a good source of protein and contains less saturated fat than pork or beef meatballs

Ingredients

  • 1 x sweet potato

  • 2 x carrots

  • 1 x red onion

  • 1 x courgette

  • 4 x small broccoli florets

  • rapeseed or olive oil spray

  • 1/2 packet 400g ready made fresh turkey meatballs

  • optional seasoning of your choice (for example Cajun, or rosemary and thyme, Italian seasoning, or crushed garlic).  

Directions

  • Preheat air fryer to 400°F/200°C.
  • Wash and cut vegetables into 1-inch-wide chunks and pat vegetables dry with a paper towel. Place vegetables in a bowl lightly spray with oil, add optional seasoning of your choice if using and mix to coat the vegetables.  
  • Place the vegetables in air fryer basket and roast for 5 minutes, then remove and shake the basket to redistribute them. * Continue air frying for a further 10 minutes (shaking the basket every 5 minutes to ensure the vegetables cook evenly).
  • To cook the meatballs place them in a single layer in the air fryer basket and lightly spray with oil; cook for 7-10 minutes (shaking halfway through) until lightly browned and cook through. 
  • *If using an air fryer with 2 baskets the meatballs can be cooked in the separate compartment when the vegetables have 10 minutes cook time remaining. If using an air fryer with one basket then add the meat balls to the vegetables after 5 minutes of cooking time to ensure meatballs and vegetables are ready at the same time.
