
Veggie Frittata
Herbs are used to season the frittata instead of salt. Eating too much salt can increase your risk of developing high blood pressure and increase your chance of developing heart disease. Try not to add salt at the table or when you are cooking.

Spray olive oil
4 x eggs
150 ml semi-skimmed milk
50 g cheese, grated
100 g mushrooms, sliced
6 x cherry tomatoes cut into quarters
Handful of chopped spinach
Fresh chopped herbs or pinch of dried mixed herbs
1 x small red onion, sliced
Directions
- Lightly spray deep oven proof dish with oil (sized to fit air fryer) In a bowl whisk eggs and milk together.
- Add the remaining ingredients to the bowl and stir to combine. Pour the frittata mixture into the oven proof dish and carefully place into the air fryer basket
- Cook for 12-15 minutes or until the eggs are set.
- To check, insert a toothpick in the centre of the frittata; the eggs are set if it comes out clean.
