Cheese and Courgette Savoury Muffins

Savoury muffins are a quick option for healthy lunches, especially if prepped in advanced and are great to take out on picnics.

Ingredients

  • 1 small courgette

  • 100 g light cheddar cheese

  • 225 g wholewheat self-raising flour

  • 175 ml semi-skimmed milk

  • 50 ml olive oil

  • 1 egg

Directions

  • Preheat your oven to 200 degrees and place the muffin cases in a muffin tin.
  • Rinse the courgette and grate it into a mixing bowl.
  • Grate the cheese and add to the mixing bowl, along with the flour, milk, olive oil and egg.
  • Mix until all the ingredients are just combined – don’t overmix.
  • Divide the mixture between your muffin cases and bake in the oven for 20 minutes, or until they are golden brown (the time needed may vary depending on the size of your muffin cases).
