Crunchy Coleslaw

This crunchy and colourful coleslaw makes a perfect as a side dish for the Summer.

Ingredients

  • 1/2 small white cabbage

  • 1/2 small purple cabbage

  • 4 carrots (peeled)

  • 125 g light mayonnaise

  • 1 tbsp white wine vinegar

  • Black pepper to season

Directions

  • Prepare the cabbages by removing the core with a knife. Discard the core. On a chopping board, finely chop into small (but chunky) pieces. This can also be done in a food processor with the shredding attachment.
  • Peel the carrots, then grate them. Mix these in with the cabbage in a bowl.
  • Add the mayonnaise and vinegar to the bowl and mix well.
  • Ready to serve! (Can be kept covered and chilled for up to 3 days)
