
Crunchy Coleslaw
Recipe by Abigail SharpThis crunchy and colourful coleslaw makes a perfect as a side dish for the Summer.

1/2 small white cabbage
1/2 small purple cabbage
4 carrots (peeled)
125 g light mayonnaise
1 tbsp white wine vinegar
Black pepper to season
Directions
- Prepare the cabbages by removing the core with a knife. Discard the core. On a chopping board, finely chop into small (but chunky) pieces. This can also be done in a food processor with the shredding attachment.
- Peel the carrots, then grate them. Mix these in with the cabbage in a bowl.
- Add the mayonnaise and vinegar to the bowl and mix well.
- Ready to serve! (Can be kept covered and chilled for up to 3 days)
