Spicy Cajun Chicken Salad with Brown Rice

Hot, spicy strips of chicken breast with fibre-rich brown rice and a fresh, leafy salad.

Ingredients

  • 110 g brown rice

  • 1 tbsp rapeseed or vegetable oil

  • 2 tbsp Cajun spice mix

  • 250 g chicken breast, cut into strips

  • 1 baby gem lettuce, washed and shredded

  • 15 cm cucumber, diced

  • 4 radishes, sliced

  • 6 cherry tomatoes, quartered

  • Juice of ½ lime

  • Tbsp mixed seeds

  • 2 tbsp Greek yogurt

Directions

  • Cook the rice according to the instructions on the packet.
  • While the rice is cooking, mix the oil and Cajun spice mix together in a bowl. Add the chicken strips and mix until the chicken is well coated.
  • Fry the chicken in a dry frying pan for around 15 minutes, on a medium heat, until cooked through.
  • Put the shredded lettuce into a serving bowl, along with the diced cucumber, sliced radish and cherry tomatoes and sprinkle over the mixed seeds.
  • Add the rice and chicken to the bowl, drizzle over the lime juice and add the Greek yogurt in small spots.
