
Thin-based Tortilla Pizza

4 large wholemeal tortillas
1400 g tin of chopped tomatoes
2 tbsp mixed herbs
1 tsp black pepper
2 cloves garlic, finely minced
3 tbsp tomato puree
120 g reduced-fat cheddar cheese, grated
150 g thin ham
100 g chestnut mushrooms; peeled, washed, and finely sliced
1 small onion, finely sliced
100 g bell pepper, finely sliced
100 g rocket
Directions
- Preheat the oven to 200 degrees Celsius.
- Place each of the wholemeal tortillas onto a baking tray.
- In a food processor, blend the chopped tomatoes, mixed herbs, black pepper, garlic, and tomato puree for a couple of seconds until it forms a smooth paste.
- Spoon enough of the tomato sauce to cover the tortillas fully.
- Prepare the cheese, ham, and vegetables.
- Assemble the ham and vegetables onto the pizza, and then top with the grated cheese.
- Bake in the oven for 15 minutes. Top with some of the rocket once cooked.
