Ingredients

  • 4 large wholemeal tortillas

  • 1400 g tin of chopped tomatoes

  • 2 tbsp mixed herbs

  • 1 tsp black pepper

  • 2 cloves garlic, finely minced

  • 3 tbsp tomato puree

  • 120 g reduced-fat cheddar cheese, grated

  • 150 g thin ham

  • 100 g chestnut mushrooms; peeled, washed, and finely sliced

  • 1 small onion, finely sliced

  • 100 g bell pepper, finely sliced

  • 100 g rocket

Directions

  • Preheat the oven to 200 degrees Celsius.
  • Place each of the wholemeal tortillas onto a baking tray.
  • In a food processor, blend the chopped tomatoes, mixed herbs, black pepper, garlic, and tomato puree for a couple of seconds until it forms a smooth paste.
  • Spoon enough of the tomato sauce to cover the tortillas fully.
  • Prepare the cheese, ham, and vegetables.
  • Assemble the ham and vegetables onto the pizza, and then top with the grated cheese.
  • Bake in the oven for 15 minutes. Top with some of the rocket once cooked.
